Basic Crepe Batter

This is the recipe I use for both savory and sweet crepes. They are perfectly tender and have just enough butter to keep them from sticking.

Equipment

  • Crepe maker
  • Blender (optional)

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup filtered water
  • ¼ tsp salt
  • 2 tbsp butter melted

Instructions

  • Place all ingredients in a blender container in order given. Blend 30 seconds, stop and stir down sides. Blend 30-60 seconds until smooth. (Or, mix in bowl with wire whisk or mixer, first combining flour and eggs, adding liquid gradually. Beat until smooth, addother ingredients.
  • Crepes may be filled with berries and freshly whipped cream.
