This is a recipe from my friend, Ellen Hoffman. It is served with tortilla chip scoops. These are addicting and disappear quickly so double the recipe if serving a crowd.

Ingredients
¼cupred wine vinegar
¼cupolive oil
1can shoe peg cornshort, stubby variety of corn
115 ozcan black beansrinsed and drained
½cupchopped green onionsboth green and white parts
1cupchopped tomato
1tspground cumin
¾tspsalt
¼tspfreshly ground black pepperor to taste
1largeavocadodiced
2cloves garlicminced
Instructions
Combine vinegar, olive oil, cumin, salt, pepper and garlic in a medium bowl.
Add remaining ingredients and gently toss to combine.
